thanks for giving such a detailed rundown of your thoughts and comments on my
thread of "What do you look for in a 5-star hotel?" - really
appreicated your time given.
Just a final question: Does Traders hire "star chef(s)" for all 4
restaurants? I've heard these chefs can be demanding and very expensive... I
understand this may be business sensitive, so please feel free not to answer...
well, not percisely sure of what Star Chefs are, but we do have very capable
Chef de Parties working in each restaurant, albeit the results are rather
overwhelming when it comes to the cost of employment, I am assured by senior
members that the chefs have done excellent work when it comes to maintain the
restaurant's image of good food for a good price.
The chefs do however, have every right to demand excellent material for the
preparations of food, if you mean by salary, it all still depends on the
economic circle of the hotel and the competition, I have heard from senior
management staffs that it is not necessary to heed to their comments, they are
after all, within the city, a few hundred others who are willing to work at the
already exclusive rate that we are preparing to pay for their salary. However,
we prefer to compromise, any more detail may be a bit elusive for me for now as
I am not that high level yet.
What is important however is not star chefs, I believe it is not necessary as
half the time when the customers come in, the first thing they tend to notice
would be food quality and food availability, a good carpenter cannot work
without his tools, and a good chef cannot cook without his pots, we focus more
on the work result than name wise.
We have several trainee staffs who are producing excellent results and further
communications with the local university and colleges that are providing the
detailed course of Hotel Management (one of which I graduated from) have spawned
almost limitless potential local experts. There have been plans to further use
the potential that is already here, star chefs usually play a more crucual role
in terms of private businesses, or under special demand.
I have seen a customer (definitely VIP) who has demands for a specific chef to
cater to his need, but this situation is very rare. The senior chefs who have
gathered a certain level of experience either branch out on their own, or prefer
to work in a higher prestige place, we however, would like to continue for the
middle ground, we prefer to supply good service and fair prices to our primary
business customers, and city dwellers which are our main source of profit.
I hope this can answer your question.
Regarding the shrinking of the size of restaurants and whats not, it is
preferable that the restaurants are spacious, I have seen quite numerous
complaints from our bar, due to the constricted premises and the often times
packed hours during lunch, customers complain over the place. One of my primary
concerns revolve around the cooling of the place, since I work in a tropical
country, our air conditioning has to be very powerful, it is crucial I believe
that the place has enough ventilation, either by space friendly (more place to
move around) or ventilation by other means.

Hi Ghost,
Please do not report doujinshi for not meeting dimensions requirements
The dimension requirements apply only to scans (the 1mln pixels) and to walls,
but not to doujinshi.
Also there is a very useful thread in the forum with the clear cut guidelines on
reporting items that violate MT Policy: Reporting: the DO's and
DONTs
