You know I'm never quite sure what to do when I have scenery with water. Where
the water meets the mountains, I can make it less flat but then it looks to
wavy, as if the water was moving a lot. So I just smudge and paint it a little

You have a tablet, right? I think... freehand draw a straight line with the size
controlled by pressure. Also, where mountains meet water there are small waves,
so maybe with a 1 pixel brush make tiny itty bitty waves?
But I'm not sure it's the water really, but the mountains.
Another thing I've noticed is that the shape of the mountains are gently sloping
and end up straight in the water, but really only cliffs do that. Mountains
usually have some smaller rubble near the edges, trees, something instead of dropping straight to the water.

My favourite vector style is shape layers. If you want to improve, then learning
how to do shape layers is good It tends
to have the best result. And your lines will be different (the ends won't be
rounded or straight; you can have varying thickness, etc.). I could explain how
it works but I only know how to do it with Photoshop, and I'm not sure which
program you're using.
